Gang Pedd Gai (Red Curry)
I was reading my Thai cook book the other day. It said basically green curry and red curry are the same. It's red because the curry paste contains dried red chillis. And it's green in green curry because of fresh green chilli peppers. So I got this bright idea. I have all these ingredients left from the weekend cooking. I shall make the red version of it....

About 1/2 cup red curry paste
2 cans coconut milk

1 inch ginger
1 inch galangal
4 cloves of garlic
2 shallots

1 1/2 pounds chicken breast

3 zuchinis (I used small eggplants for the green curry - I'm trying zchinis this time - for the color effect - you know - red and green)
1/2 pounds string beans
10-15 Shitake mushrooms

10 lime leaves
1 cup Thai basil

Fish sauce
(I added brown sugar for the green curry but I remember that red curry is not as sweet as the green kind. So I'm not using sugar here. Plus all the vegetable will make the curry sweeter anyway.)
1 tablespoon dried red chilli flakes
(The curry paste is too mild for me - I'm adding more chilli for extra hotness.)


  1. Chop ginger, galangal, garlic, and shallots into really really fine pieces. If you have food processor, god bless you.

  2. Cube zuchinis, cut string beans into 1 inch pieces, quarter mushrooms and cube the chicken.

  3. Use the top creamu part of the coconut milk (about 1/2 cup) to fry the curry paste with ginger, galangal, garlic and shallots for 2 minutes in medium high heat.

  4. Add chicken, stir occationally until cooked.

  5. Add the rest of the coconut milk. Tear lime leaves roughly and add to the curry. Add fish sauce and/or sugar to taste. Simmer about 10 minutes.

  6. Add the vegetable. Cook a bit more. Turn of the fire. Tear the basil and spinkle over the curry.

What's in the name:
Gang = Curry
Pedd = Hot and spicy
Gai = Chicken

There's similar but not exactly the same pronouciation of Ped which means duck. There's also a food called Gang Ped which means duck curry...

Thai people here also call the curry Gang Dang (Dang = Red) - literal translation of English name for the curry.
